Hello and welcome to Christmas Dinner Week on Blogmas! Today we are looking at a really great side dish for your roast dinner – easy ratatouille! This is my version of the classic dish made in a healthy and easy way! Enjoy!
- 2 courgettes
- 1 aubergine
- 2 peppers - I used green
- 2 tins of chopped tomatoes
- Olive oil
- Garlic puree
- Cut all of your vege and fry off in a large pan with a dollop of olive oil
- Add in the tomatoes and garlic and simmer for 10 mins
- Transfer all to an oven proof dish and cook in the oven on a low heat, fan 140 for 1 hour
And there you have it! That simple!
